Baker Bart Schelstraete Honors Lotte Kopecky with Special Cakes and Gold Medals

Baker Bart Schelstraete of Bakkerij Sint-Anna is not shy about a stunt. Like many other Flemish people, he was cheering for Lotte Kopecky on Sunday. However, he had another extra-sports reason for it.

“A flexi-jobber, Kristof Neyt, who comes from Assenede, works for me,” says Schelstraete. “Kristof lives fifty meters from Lotte Kopecky. Because he cycles regularly himself, he often bumps into Lotte. At the previous two Belgian championships she won, he always asked me to bake a cake. He then personally gave them to Lotte.”

Now Bart told Kristof that he would do something special if Lotte would become world champion on the road. “We secretly hoped she would win and on Sunday morning we started preparing. When her gold medal on the road was a fact, we decorated all the cakes with a gold medal and Lotte Kopecky’s photo. Our best-selling cake, the sultana, got a chocolate gear on top and we decorated it with gold leaf. It was an added value for the customer, because we didn’t charge anything extra for it.”

The Kopecky pies proved to be an instant success in the store. “Everyone was talking about it and that’s how we heard how popular Lotte Kopecky is here too. Everyone is a fan of it. Her modesty adorns her. Now we are negotiating to be there when Lotte Kopecky is inaugurated in Assenede. We certainly want to hand over a cake there ourselves,” concludes baker Schelstraete.
